Last night we finished watching The Lion, The Witch and the Wardrobe with our kids and as we often do when we’re watching a movie together, we made caramel popcorn.
Some time ago, since we try to stay away from refined sugar, my wife figured out how to make it with real maple syrup. It’s a great snack. I recommend it.
Here’s the recipe:
1/2 – 2/3 c. popcorn
1/2 c. butter (one stick)
1 c. real maple syrup
1 t. salt
1/2 t. baking soda
Vanilla to taste
Pop the popcorn. Heat butter, syrup and salt in medium saucepan until bubbly. Add baking soda and vanilla. Pour over popcorn, which is split between two 9×13 pans. Heat in 250 degree oven for 30 to 40 minutes, stirring every 10 to 15 minutes.
